Insalata Rustica

my mom had this salad at a restaurant recently. then, she decided to recreate it at home for all of us to enjoy. it is so delicious with both a little bit of a salty flavor and a little sweet flavor too. she tweaked the original recipe that she found and this came together so perfectly. needless to say, we finished off this dish quite easily!

here’s what you’ll need:

1 large carton of spring mix
1 apple, cored and sliced
3 plum tomatoes
sugared pecans  - see, i told you earlier in the week that these would come in handy!
pack of prosciutto
pumpkin or sunflower seeds
raisins and/or craisins
evoo
balsamic vinegar
salt and pepper to taste

we cooked the prosciutto down just a little bit in a pan before assembling the salad with the rest of the ingredients. then we assembled. serve in chilled salad bowls and enjoy this palette pleaser!
