Fall Trends – My Closet


Well, hello there! So, apparently, I took a brief blogging break. I apologize. My life is quite hectic during the school year, so there may be sporadic breaks occasionally!

I have been very productive at home though recently. I’m not sure if it’s the (non) Fall air or what. But I’ve been organizing more around the house, and I find everything is more peaceful when it’s neat. Which brings me to my closet…I’m always donating old clothing and shoes. I really like to do this, so that my closet does not become too crowded. My closet is a nice size, and there’s no excuse for it being cluttered except me collecting too much! With that being said, I have decided that each season (we really don’t have seasons where I live- it’s basically cool for 3 or so months and warm/hot the rest of the year) I will try to get a few new fashionable items. As always this will be done on a budget cause that’s just how I like to shop. Why overpay, right?

I am determined to stay under $100 for these items. Obviously, the boots would bust my budget. There are some great used ones on Ebay for close to half the price of new ones.

Weekend Happenings


I had a very restful and rejuvenating weekend, which I really needed.


On Saturday morning, I ditched my workout….to go shopping! I’m not so proud of that, but it happens. When a friend calls and says that the entire Ann Taylor Loft store is 40% off, all other plans are immediately halted. I happily arrived at the store at 10am sharp to find a bunch of very eager shoppers just like myself. It was like a party in there and you could just tell that all the ladies were excitedly looking for new Fall pieces. I browsed for a while, and then…the dreaded line to the fitting rooms. It ended up not being too bad of a wait, and it only took me about twenty minutes to get a fitting room. I bought two pairs of cords, a black and reddish/orange color. The red/orange color is just something that’s fun to have, and the black pair are classic and will be so practical and versatile. Here they are.

I decided to give myself a pedicure when I got home. I had a real pedicure about six weeks ago, and it was time for a trim and new polish. I love painting my nails, and I’m good at it. I kinda stink at pedicures though. I took my time and was determined to get it right this time. I wanted to do it well so it would last. As I said, I can usually get about six weeks out of a real pedi, which, I think, is pretty impressive. My pedi looked great and I was so happy to be letting my toes dry all afternoon. Well, we decided to go for a walk on the Lakefront later in the day. I strapped on my exercise socks and shoes. We had a lovely two mile walk with our puppy, Cami. BUT, when we got home and I was taking off my socks and shoes, I had to literally peel my socks from my nails. Yikes…sheer horror! My beautiful pedi now has sock material print all over. As my husband says, it looks textured now. Not the look I was going for!So, I’ll try again tomorrow. I want pretty toes…for free.


We threw together the simplest dinner ever on Saturday night. I marinated chicken tenders all afternoon and we threw them on the grill (ignore the burgers in this old pic). So juicy and tasty, and I cooked extra so we would have leftovers. Yay for leftovers! On the side we had microwaved sweet potatoes with butter. Normally, we go all out with sweet potato toppings: cinnamon, almond butter, maple syrup. But this time, we both wanted them rather plain, with only butter. They’re so delicious in their natural state that I can easily eat them plain.

It was my pick for movie night, so, of course, it was a girly one: The Lucky One. I loved it!

Sunday, I finally got in my scheduled workout. I shoot for exercising three times a week while I am working, four or five times a week when I’m not working. I consider three times a week an accomplishment, as my job is physically demanding and I am on my feet (getting a workout!) almost eight hours a day. It always feels good to work the muscles properly though and really sweat.

Well, that rounds out another weekend for us. I know…we’re such a wild and crazy couple! Now, I’m looking forward to a few more cool fronts to hit. One is actually on the way right now! The official start of Fall is this week and I need some pumpkin in my life real soon. Maybe next weekend…

Workweek Breakfast And Lunch Planning


Well, it’s back to work for me! I’ve been back to teaching for a few weeks now. I told my husband that the theme of this school year is convenience. However, there is one thing that I am never willing to compromise when feeding us and that is our health. As I’m sure many of you know, it can be very challenging on limited time and energy to “whip up” healthy things for us to eat 7 days a week. Recently, I’ve figured out a few tricks that seem to be making things a little easier in this department and I do not feel that we are sacrificing our health or lacking flavor. I must preface this with the fact that neither of us really mind eating the same thing over and over. I am also only cooking for two adults at this point. During the workweek, our meals are not creative at all. The focus is getting decent food in our bellies quickly. Don’t get me wrong, we love to cook and eat and we live in a city where good food is abundant. During the workweek though, the goal is simplicity. Today, I’m sharing the how-to’s of our Monday through Friday eats with you.

On Sunday, I do a lot of prep work. It really pays off though!

Here’s the breakdown:

Every Sunday

In a 350 degree oven, I place 10 whole eggs. This is a method of making hard boiled eggs that works fabulously. In my opinion, it’s easier than actually boiling them. They cook for 22 minutes. Then, they are placed in an ice bath. My husband eats 2 of these everyday as part of his breakfast. Next, I scramble 5 eggs for myself, as part of my breakfast. I put in the fridge and I portion them out and eat 1 egg every morning. Yes, they last all five days and stay quite fresh actually.

The next thing I work on is roasting almonds. We each take about 4oz of these daily as snacks. I roast them on top of the stove usually with whatever I can find in the house. Some things I throw in  are butter, olive oil, bar b q sauce, sriracha, spices such as cumin, salt, cinnamon. You get the idea! Just be creative. This takes about 15 minutes, using 4c of almonds.

 
Every Night

I pack breakfast and lunch for my husband and I every night. We each work long hours and have to have everything ready to go. There’s no time to do this in the morning. I’ll start with breakfast. I explained part of our breakfast above (the eggs). We also have smoothies in the morning. At night, I put 2C almond milk, 2 bananas, protein powder, cocoa powder, 2 tbs peanut butter and a handful of kale into the blender. This stays in the fridge overnight and my husband blends it for us before work in the morning. It’s as fresh as ever! I have to have my egg and smoothie to start my day or else I just feel “off.”

Now onto lunches…

I make a salad for each of us consisting of lettuce, tomato, avocado, seeds of some sort, cheese, and salmon for him, chicken for me (if I cooked it on Sunday). We each take a piece of fruit to go with lunch. Sometimes, we take plain yogurts as well (dressed up with maple syrup, cinnamon, and any other yummies I may have on hand!)

As I’m sure you can tell, this is quite an operation I have going and it has taken me four years to get it to this point. I feel like I have it down to a science (for our family), with little room for improvement. It works well for me. Who knows…I’m sure someone out there has a more organized way of doing this. if you do, please share!

hurricane isaac


sorry for the disappearing act last week, but we’ve had to “weather” this storm the past few days! this meant no internet connection for us for 5 very long days.

happy labor day to everyone! although summer is in it’s prime here, i know this means the end of summer for many of you. i am jealous of those of you who will soon be getting a taste of fall.

this is my re-cap of hurricane isaac. this was written on wednesday morning, in the midst of it all. once again, we were spared and feel so very lucky with the outcome.

ahhh, yes…it seems as though in the southeastern region, we all like to take a “staycation” almost every august. we like to “hunker down” and “ride out the storm” in our homes with no electricity, sometimes no water, and debris flying all over the backyard. sounds fun, right? not so. all kidding aside, this storm is such a coincidence because today (wednesday; the day we are experiencing the worst of isaac) is the 7 year anniversary of hurricane katrina.

for me, all of the madness started sunday morning when i decided to take my usual bi-monthly trip to sam’s to “make groceries” – ‘cause that’s what we do in the south! when i arrived at sam’s, i noticed the line for getting gas was about 30 cars deep. then, i noticed a line of people wrapped around the store waiting to get inside. i thought to myself that this was rather odd. once in the store, i could tell people were in a panic. for the first time in my life, i felt like i was the calm one. trust me, that says a lot. i’m usually not the calm one. so i called my husband and asked why all these people were in a frenzy. not one to worry much, he said “yea, there’s a little storm there watching that could come get us.” you must understand that whenever there is a storm mentioned, or worse yet, a hurricane mentioned, people in my area get very intense and nervous. after going through hurricane katrina, i understand this (i was lucky enough to be evacuated for that, though). somehow, i managed to get my groceries super-fast at sam’s and I escaped the 20 person deep checkout line when my good eye spotted a self-checkout line with only a few people ahead of me.

i have always said that i wish we would start school after labor day because it’s just too hot to start before labor day. well, it looks like my wish may come true this year. i had my first grade students for a whopping six days before this happened. to my surprise, it looks like we may be out of school this whole week. so we will get a taste of what it’s like to start after labor day. our little ones come in from recess with purple faces in august because they are so hot. starting after labor day may just be the solution to that. what a novel idea! the rest of the country seems to already be aware of this! maybe, just maybe, with our hurricane history, we should give this a try.

we have been experiencing the full effects of Isaac for about 12 hours now. our families have decided to stay put in our secure homes. we do not take evacuation lightly here. it is a very carefully calculated decision with each storm as to whether or not to evacuate. we have been having very high winds (60-80ish mi/hour) and rain since about 8pm last night. unfortunately, at this point, the storm is stalled. it is literally sitting on top of us right now with no end in site. our meteorologists are saying that we will be lucky if it is gone in the next 12 hours or so. so, what does this mean for our property? there’s quite a bit of debris flying around. our small fence in our backyard came down within an hour of this beginning last night, shingles have fallen, and we have a small roof leak. thank goodness my husband checked the attic or this could have meant a completely flooded living room. and, this is not even a big storm. this is considered rather mild. we do feel extremely lucky that, for some reason, our home has been one of the few in the city that has had power all the way through. yep, we have not lost power. i am totally flabbergasted by this, but i just feel very blessed that we have had power the entire time. i wish everyone would be so lucky because there are people who need power much more than we do.

overall, we are doing just fine. they are asking that no one leave their homes until further notice, so we have really taken advantage of this. We cooked a big pot of gumbo all day yesterday (recipe coming soon!), have fixed 2 great breakfasts, and, quite honestly, are enjoying a little bit of down time. once normal life resumes, i know it will be go, go, go. so, i feel very lucky right now and i hope the rest of the southeastern region does not see too much destruction.

regular blogging will resume as of today. i have some really fun and delish recipes coming up in the next few weeks! i’m so anxiously awaiting fall!

shrimp and grits at MONDO


a favorite dish of mine to order at restaurants is shrimp and grits. luckily, we have so many wonderful restaurants in town that serve this dish. i have been lucky enough to try several variations of this dish while eating out around town. it’s fascinating to me to experience the different ways in which chefs prepare shrimp and grits. this particular variation at MONDO was truly a winner. on a side note: i realize that some of you who are not familiar with the south may think this (shrimp and grits) is a rather odd pairing. you’ll just have to trust me on this one when i say it works surprisingly well. like i said…out of all the great food in my city, i choose to enjoy this as much as i can.

MONDO is one of susan spicer’s restaurants. we have been for dinner and brunch recently and we enjoyed it very much each time. i got the shrimp and grits a few weeks ago when we went for brunch and i was delighted with my choice. most of the food there is quite different and i enjoy this because the pairings are unique and everything that i’ve tried has been bursting with flavor.

some other things we’ve tried and enjoy at MONDO are the smoked half chicken with thyme mustard jus, sautéed gulf fish with green beans, mondo bleu cheese burger with griddled onions, and the vanilla lemongrass sorbet

if you are ever in this area of town, i highly suggest you stop in and give this restaurant a try. the atmosphere is nice, the prices decent, and, most importantly, the food is delicious. herbsaint and bayona are two other susan spicer restaurants in town. haven’t tried these yet, but i would love to eventually.

shrimp and grits is something that i have not been adventurous enough to try making at home. just nervous that i will not be able to get the sauce/gravy flavorful enough. i’m sure i’ll end up trying this sooner or later and i’ll make sure to let you know when i do!

insalata rustica


my mom had this salad at a restaurant recently. then, she decided to recreate it at home for all of us to enjoy. it is so delicious with both a little bit of a salty flavor and a little sweet flavor too. she tweaked the original recipe that she found and this came together so perfectly. needless to say, we finished off this dish quite easily!


here’s what you’ll need:

1 large carton of spring mix
1 apple, cored and sliced
3 plum tomatoes
sugared pecans  - see, i told you earlier in the week that these would come in handy!
pack of prosciutto
pumpkin or sunflower seeds
raisins and/or craisins
evoo
balsamic vinegar
salt and pepper to taste

we cooked the prosciutto down just a little bit in a pan before assembling the salad with the rest of the ingredients. then we assembled. serve in chilled salad bowls and enjoy this palette pleaser!

sugared pecans


here in the south, we love pecans! anything from eating them plain to enjoying them in a fresh pecan pie will make us happy. a few years ago, my mom made sugared pecans. i didn’t remember ever eating these before. and let me tell you…it is quite a memorable experience. they are definitely a sweet treat, and everything from their texture to sweetness makes them fabulous! this recipe for sugared pecans is a precursor to a recipe i’ll be posting later in the week that i don’t think you’ll want to miss!

these sugared pecans are great plain, in salads, over ice cream, with other desserts, and with anything else you can think of trying.

here’s what you’ll need;

1 egg white
1tbs water
12oz pecan halves
3/4c sugar
2tsps ground cinnamon
1/2 stick unsalted butter

preheat oven to 300. line a jelly roll pan with foil. in medium size bowl, whisk egg white and water until foamy. add pecans and stir until coated. set aside. in another bowl, combine sugar and cinnamon. pour over pecans and stir to coat. melt butter in pan (in oven), remove pan from oven and gently stir nuts into butter. spread evenly and bake about 25 minutes, stirring every 10 minutes so they don't burn. allow to cool in pan.

we enjoyed our sugared pecans over coffee ice cream!

macaroni and cheese

doesn’t this mac n cheese look just delicious? well…i’d be lying to you if i told you it was my creation! all the credit for this recipe goes to my husband. creating good mac n cheese kind of runs in his family. all i can say is that he learned well from his momma on this one! we like to make this for special occasions and family gatherings, as it is always quite a hit. it is also very nice to have on hand (pre-portioned) in the freezer. i am one of those crazy ladies who loves to keep a stocked freezer. at any given moment, i usually have around 15 pre-made meals in my freezer ready to go….just in case. it also makes weeknight dinners much easier, but my method on this is another post for another day. back to mac n cheese. here’s a warning for you: this stuff is rich and creamy, and very delicious! i think you’ll be very happy if you try it!

1lb pasta (i use rice pasta, but you can use whatever kind you like)
4C heavy cream
2lb sharp cheddar
1 onion and 1 bell pepper
4 habaneros (or spice of any kind…add to taste)
1/2 stick of butter
2 eggs
salt and pepper to taste

chop onion, bell pepper, and habs. cook noodles, but leave them firm. sauté onion, bell pepper, and habs in 1/2 stick of butter. let this cool for 20 minutes or so. slowly add cream, eggs, salt/pepper, and 1/2 of the cheese. stir until smooth. put noodles in cheese mixture after removing from heat. butter a 13x9. pour noodle and cheese mixture into 13x9. cover with remaining cheese. bake uncovered on 350 for 1 hour. *tip* put a larger pan under the 13x9 because in the beginning it will be very runny and it usually drips.

a simply delicious dessert


friends, i have a nice little dessert for you today that takes all of 10 minutes to prep. if it’s quick, tasty, and healthy, it fits the bill for me! this; however, isn’t really on the healthy side, but it was just a little weekend treat for us to enjoy with our very special guests.

here’s what you’ll need:

ice cream of your choice – we used neapolitan
6 oz chocolate – melt this, add a little milk if necessary to achieve a “drippy’ consistency
4 oz heavy whipping cream

ever since i had my mom’s homemade whip cream, i have never quite been able to go back to using cool whip. she ruined me. but that’s ok. i’d much prefer to take a few minutes and make my own whip cream. it truly is that.much.better.

make sure your heavy whipping cream is really cold before you start this process. i used my handheld mixer to do this. pour heavy whipping cream into a spacious bowl (because it will splatter), crank the mixer up to high speed and whip your little heart out. i like to be cautious, so i probably over whip it just a tad, but that’s ok. it’s never turned to butter on me. it takes me about 5 minutes to get it to the consistency that i like. think stiff mountain peeks. that’s what your going for. when finished whipping, refrigerate.

melt your chocolate. my lovely husband did this step for me using the microwave. you could do this on the stove, if you like.

layer in a glass or bowl: 2 scoops of ice cream, a few generous dollups of whip cream, drizzle melted chocolate on top. put this in the freezer and enjoy later.

we found out that they do need to sit out on the counter about 10 minutes before you plan on eating or they will be too hard to properly indulge.

i love this dessert most of all because the melted chocolate creates a hard shell. i think i was a kid the last time i had ice cream with a chocolate shell. this was definitely worth the wait!

a yogurt parfait


this parfait is not only refreshing, but it is also like a light dessert. we enjoyed this unexpected treat over the weekend when i happened to have a few extra things in my fridge. i threw this together with some extras that i had on hand from making the fitnessista’s fabulous macaroons!

for one parfait:

1c greek yogurt – i think i’ve mentioned before, but my favorite brand is fage. it’s literally like cream!
1tbs ground almonds
1-2tbs maple syrup
strawberries – you can use any kind of fruit you would like. we actually used fresh blackberries another time…yes, we had these quite a few times over the weekend!

here’s a continuation of my little series on the new all natural products i’m using. 100% pure fruit pigmented tinted moisturizer was the first all natural beauty product i reviewed. it’s a great product and you can check out all the details in the post i wrote on it.

everyday minerals is a company that i really love and i have actually used there products for 3-4 years now. their customer service is stellar and i have gotten quite a few freebies with each order that i’ve placed. it can be difficult buying makeup online and this company lets you choose free samples that come with your order. this has helped me tremendously in determining the proper colors for my skin. this company is organic, vegan and eco-friendly. animal lovers will also like that they do not test on animals – much love to our furry friends! here’s a great introduction to the company.

i started using the base first. i cannot get over how reasonably priced it is (along with everything else that Carina sells)! i wear makeup on average 5-6 days a week. i only have to order it once every 10 months or so. this base gives good coverage and i only use a light dusting. i would definitely say that a little goes a long way. the base comes in a variety of finishes such as matte, semi-matte, intensive, and satin. it’s nice to be able to choose which finish you like as, with changing seasons, your needs may change. i have a light complexion and this summer i have been using the medium beige neutral base intensive. this base is a bit darker than i would normally wear; however, i had the bright idea to switch to a darker base and just omit using bronzer. i’ve done this for the last two months and it’s worked out very well!

thanks to the free samples, i discovered how wonderful the concealer (color is use is: aussie perk me up) and blush are. again, it does not take much to get the look i’m trying to achieve. i guess i should point out that i do not like heavy makeup. i go for a natural, yet polished look. the concealer gives great coverage and there are many shades of the blush that i’ve tried and really like too. for the last year or so i’ve been using the color once and again for blush. to give a little shimmer, i use the come what may on top blush – i just dust this on my cheeks last. this makeup is definitely lightweight on the skin. my skin still feels like it is able to breathe while having this on all day. and yes, it does stay on all day. even on my busiest work days when i am outside in the southeastern heat running after children, i still have makeup on when i get home from work until i remove it during my shower.

taco chicken lettuce wraps


this was an idea that just sort of came to me. my momma gave me some beautiful romaine on friday, and i was trying to think of something different to do with it besides the usual salad. i love salads and eat one almost everyday, so i needed to fancy this up a bit! this is what we had for dinner on saturday evening. it was a huge hit with the husband, and i liked it a lot too. like most of my recipes, it was pretty quick to prepare.


here’s what you will need:

7 chicken tenders or 2 chicken breasts
olive oil and butter – 1tbs of each
washed romaine lettuce
taco seasoning – either bought or homemade


after cleaning the chicken, cut the tenders like fajita meat (so, in small strips). heat the olive oil and butter together in a pan over medium heat. then,  cook the chicken strips for about 5-8 minutes. add in 1/4c taco seasoning and 2/3c water, cover and simmer for 12 minutes.

meanwhile, you can prepare your toppings. for this, i sliced tomatoes, avocado,and  lime. we used fage greek yogurt in place of sour cream and pepperjack cheese.

when the chicken is finished simmering, lay out your romaine leaf on a plate, stuff with chicken and toppings, and you’re ready to eat. i originally thought we would eat these wrap style, but soon realized we were eating them boat style, which worked nicely! it’s your choice – we could have easily wrapped them.

crepes


do you want an easy, fun, and delicious breakfast idea? well, i’ve got just that for you today. strap your seatbelts on because this is a 3 in 1 post. that’s right, 3 recipes in one post! here we go…

i’ve been wanting to make crepes for a while and i finally got the chance to do so on saturday morning. it was so much easier than i expected. i really enjoyed them too. i’m not always super hungry in the morning, so pancakes and waffles can be a bit too heavy for me. i really loved how light the crepes were. the most fun part for me was making a topping station. so many different things can go on or in crepes and we just pulled things we had on hand in the kitchen. this would be a fun breakfast to make with children, if you have them!

crepes:

1c brown rice flour
2/3c almond milk
3tbs sugar
1tsp vanilla
2 eggs

use a mixer to beat all ingredients together. pour 1/4c of batter into in a 5inch nonstick pan over medium fire, cook about one minute on each side.

this makes 7 crepes.



toppings

you can play around with this. we used bananas, fresh figs, frozen berries, cooked apples, peanut butter glaze, maple syrup, and a light dusting of powdered sugar

peanut butter glaze:

1tbs peanut butter
1tbs butter
2tbs maple syrup
microwave for about a minute, then stir and pour
add a touch of milk to get to desired consistency


cooked apples:

a straw purse



my mom and i took a little ride to the northshore last week to do some consignment store shopping. oh…how i love these places! i’ve been looking for a straw purse since spring. i saw a really nice one at target in the spring, but i’m cheap, and didn’t want to pay $35 for it. i was not expecting to find one this summer and had just accepted that it wasn’t meant to be. we came across a rather large goodwill while consignment shopping and i just had to stop in. this cute little bag caught my eye right off the bat. it was $2.99! broke the bank! it was in good condition on the outside, but the inside was grimy. i was able to flip the inside out and i took a damp rag with gain laundry detergent on it and scrubbed and scrubbed until i was happy with it. i let it sit under a fan to dry overnight. it smells fresh, looks great, and hasn’t left my side since i got it! i’ve actually gotten quite a few compliments on it.


i like the “bamboo look” handles it has, but they do pinch my skin at times, which is a little uncomfy. but for that price and cuteness factor, i’ll get over it.
